After returning to Greenville, he opened two beloved restaurants, Anonymous Burger and White Wine & Butter, where locals and visitors alike flock for delicious meals.
This month, Chef Sibert is not just stirring up excitement in his kitchen but is also preparing for the prestigious Euphoria food festival, which is a highlight of the culinary calendar in Greenville. Adding to this achievement, he has been named a 2024 South Carolina Chef Ambassador, representing a commitment to promote the state’s rich agricultural treasures and culinary talents.
When asked about his new role, Chef Sibert shared, “The goal is to unite chefs from various regions of South Carolina. We want to showcase our unique agricultural systems and culinary scene while promoting tourism.” He emphasizes the importance of using local produce rather than sourcing from afar. “We’re shining a light on local farmers, fishermen, and the incredible flavors they bring to our tables,” he explained.
Chef Sibert has already participated in several high-profile events, including the Charleston Food and Wine Festival, where he made quite an impression with his skills and dedication. It’s evident that his journey as a Chef Ambassador is just beginning, with many exciting events lined up, including the upcoming Euphoria.
As a participant in Euphoria, Chef Sibert is eager to showcase his culinary creations. “This year, I’ll be presenting a boiled peanut falafel paired with a mustard green tzatziki, sweet potato crackling cornbread with wildflower whipped honey butter, and my signature dish of braised Meishan pig with cream corn and golden beet chow chow,” he revealed. This diverse menu reflects his deep connection to Southern flavors while highlighting ingredients sourced from local farms.
So, what makes Southern food so undeniably special? According to Chef Sibert, it all comes down to the love and care poured into every dish. “Southern cooking is about the heart and soul. It’s that love for the food that transforms a simple meal into a memorable experience,” he passionately conveyed. He recalls his time in New Orleans, a city where even gas station food can surpass expectations, thanks to the low and slow cooking method and the level of seasoning that speaks to the cook’s heart.
Breaking the mold further, Chef Sibert doesn’t believe in pinning himself down to a single signature dish. “I don’t have one because I enjoy the challenge of evolving. My best dish is always my next dish,” he said with a spark in his eye. This creative spirit has allowed him to take on exciting culinary challenges, including participating in the Food Network’s Guy’s Grocery Games, where he thrived on the inspiration and encouragement provided by fellow chefs.
If Chef Sibert had the chance to serve a Northern neighbor a taste of Southern cuisine, he would choose to prepare Shrimp and Grits. “So many people up North don’t even know what grits are! That dish really embodies the essence of Southern soul food. It’s comforting and flavorful, much like the culture itself,” he explained, pointing out that Southern food carries with it a story, a tradition passed down through generations.
With big things on the horizon for Chef Michael Sibert, he remains rooted in his passion for Southern cuisine, ready to share it with the world.
