Greenville’s Papi: From Fields in Mexico to Culinary Fame

From Fields to Flavor: The Inspiring Tale of Greenville’s Papi

In the bustling city of Greenville, a culinary sensation is making waves, and it all started in the fields of Cuautla, Mexico. Meet Jorge Barralas, better known as Papi, a remarkable individual whose journey from humble beginnings to restaurant owner is a tale worth sharing!

A Rooted Beginning

Imagine growing up in a small town in Mexico where education wasn’t at the forefront. Papi never made it past the third grade; his childhood involved working alongside his father and grandfather in the fields. Picture a young boy wielding a machete to chop sugar cane and later working in a factory that distilled that very crop into alcohol. That’s the foundation of Papi’s life!

In his mid-teens, he embarked on this hard-grafting path, paving the way for a future he could hardly have dreamed of. In the 1990s, seeking better prospects, Papi made his way to California for construction work, but destiny soon led him to Greenville in 1995 where family awaited.

Turning the Tables

Fast forward a couple of years—by 1997, Papi was working full-time at a local construction company. At night, he took on the role of a dish washer in a newly opened restaurant, Soby’s New South Cuisine. It didn’t take long for Papi to showcase his culinary talents, and before he knew it, he had transformed his role—moving on to kitchen prep. This shift led to a significant milestone: he created Soby’s now-famous Garlic Cheddar Biscuits!

“People would try the dishes my abuela used to make, and before I knew it, the restaurant’s owner, Carl Sobocinski, was suggesting that we think about opening our own place,” recalls Jorge Jr., Papi’s son, who now joined him in the family business.

Building a Culinary Legacy

In 2013, with the love and support of Carl and his family, Papi’s Tacos blossomed into existence. It was more than just a restaurant; it was a piece of home, a celebration of family recipes, and an endeavor to bring the community together through food—a dream that had been simmering in Papi’s heart for years.

Today, Papi proudly owns not one, but two establishments: Papi’s Augusta and Papi’s Terraza, both brimming with flavors that resonate with his Mexican roots. With each bite, patrons can taste the history and love that has gone into curating the menu—a delightful feast inspired by traditional family gatherings held every Sunday.

A Community Connection

But it’s not just the food that makes these restaurants special; it’s the sense of community and family that permeates every dish. Papi’s son Jorge Jr. emphasizes, “Food was always a reason to gather. That’s what my parents wanted to create—a space where people can come together.”

The connection between Papi and Carl Sobocinski is more than just a business arrangement; it’s a lifelong bond. “Even after we bought him out, we still continue to have that relationship. Carl told me, ‘Don’t worry, I have your back,’” recalls Papi fondly.

American Dream Realized

Reflecting on Papi’s journey, Sobocinski remarked, “I knew this guy had what it takes, from working in the fields to now being a restaurant owner. This is what the American Dream is all about. It’s profound to play a part in helping him achieve it.”
