Greenville Chef Competes on Food Network Show

Greenville chef and restaurateur Dayna Lee-Márquez recently showcased her culinary skills on the Food Network. Competing on the popular show “Beat Bobby Flay,” Márquez faced off against El Paso, Texas, chef Enrique Lozano in a thrilling cooking duel.

Unique Dish Creations on Display

During the competition, both chefs were challenged to prepare a dish using a flat iron steak. Márquez wowed the judges with her innovative breakfast taco creation, while Lozano presented a delicious tostada.

Owner of Comal 864, a popular restaurant located in the City View neighborhood, Márquez demonstrated her culinary expertise by incorporating traditional flavors and techniques into her dish. Her breakfast taco featured a perfectly cooked medium-rare steak, chunky guacamole, scrambled eggs, and cotija cheese, all wrapped in a homemade flour tortilla.

Speaking about her dish, Márquez shared her Texas roots and the influence of her grandmother’s cooking on her culinary style. She explained that breakfast tacos made with flour tortillas hold a special place in her heart, reflecting the unique food culture of her hometown.

Stepping Out of Her Comfort Zone

Although Márquez did not emerge victorious in the competition, she expressed pride in representing her restaurant and sharing her passion for food on a national stage. For Márquez, the experience was about facing her fears and pushing herself to new heights.

Reflecting on the opportunity to compete on the Food Network, Márquez said, “I did it because I was scared. It was something that feels like it was definitely out of my league… but if an opportunity comes your way, you have to take it.”

Expansion Plans for Comal 864

Comal 864, which opened its City View location in 2021, has gained recognition for its flavorful Mexican cuisine and vibrant atmosphere. Márquez’s culinary talents have been celebrated, with a recent nomination as a semifinalist for the 2023 James Beard Awards for Best Chef in the Southeast.

The success of Comal 864 has led to plans for expansion, with a new location in Greenville’s Nicholtown neighborhood set to open soon. The restaurant will occupy the space formerly held by The Seafood Spot, bringing Márquez’s unique culinary creations to a new community.
