So, how did this venture begin? Well, it all started back in 2009 when Lopez and Franco discovered their mutual love for food. Lopez shared, “My dad was a minister and his dad was a missionary in Spain who preached at my dad’s church.” From there, the two hit it off, and their friendship blossomed over countless Sunday dinners, cooking, eating, and enjoying good times together. “No one eats better than our kids,” Lopez chuckled, highlighting just how invested they are in good food.
After running a successful catering business for over a decade, Lopez felt it was time to take a leap of faith. When Aston Properties approached them, they saw an opportunity they couldn’t pass up. “We’ve been thinking about this for many years,” he added, knowing that a traditional Spanish tapas bar would be a welcome addition to the local culinary scene.
As Lopez explained, “There are no traditional Spanish tapas bars in the Upstate.” With The Commons being a bustling food hall that connects to The Swamp Rabbit Trail, they knew they were on the right track. The name “Paseo” translates to “stroll” in Spanish, perfectly encapsulating the laid-back, communal vibe they aim to create.
Now, let’s talk about the menu! Paseo promises to offer an array of authentic tapas, all made from scratch using the finest imported meats and cheeses. It’s all about those small bites that pack a punch. Are you drooling yet? Here’s a sneak peek of some standout dishes:
They’re also curating a fantastic wine selection. Franco, who enjoys visiting local wine dinners, believes they’ll bring something special to the table. “We’ll even offer sherry and sangria,” he said, making your summer evenings sound even more enticing!
Paseo will have bar seating for about 12-14 guests, catering not just to those looking to dine in but also to people who want a quick grab-and-go option. “We want to be a place where customers can have an elevated food experience,” Franco said, emphasizing their commitment to creating memorable moments for all diners.
What’s even more exciting? The duo has plans for future events, like ticketed Sunday dinners that showcase a themed three or four-course meal. “It’s going to be something special,” Lopez teased, clearly pumped about what’s to come.
